Former Nobu head chef Scott Hallsworth has launched a new Japanese restaurant in Holborn. Wabi serves modern dishes like tea-smoked duck tataki and a foie gras Martini with umeshu jelly, nashi and black vinegar. The restaurant also features a sushi bar overseen by Taiji Maruyama (also ex-Nobu) and a pastry bar serving European desserts with Japanese influences.

Thursday, February 21, 2013 - Affordable lunchtime bento boxes are available but constructing a satisfactory meal from the à la carte menu at dinner is a pricey business...All of which is a shame as the kitchen is capable of accomplished creativity in dishes such as raw sweet shrimps topped with an earthy crumble of yuzu ‘koji’; quail kara-age; and pork belly buns that owe more to celebrated chef David Chang than they do to Japan.

Dined at the new Wabi last week and thought it was stunning. Head chef Scott has taken the Nobu experience to a whole new level making existing Japanese restaurants look dated. The tempura batter is phenomenal and the balance of flavours in the cooking is exquisite. The Sashimi is of the highest quality and I can't wait to go back.

Friday, January 11, 2013 - The BBQ grill set was just lovely. Skewers of soft sliced onions dipped in a powerful miso dressing, delicately boned chicken wings with a perfect crispy skin, a good dollop of powerfully-smoked aubergine salsa, and the most wonderfully cooked (if slightly underseasoned) lamb chops that were just so addictively tender I stripped them clean to the bone in seconds. The sesame-ponzu dressing was a great and time-tested match to the charcoal-crisped protein.
