Guinness is good for you - especially when cooking

St Patrick's day is over but now you've sobered up how about putting a drop of the dark stuff into your cooking? We have some great recipe ideas courtesy of Guinness

Rack of lamb with Guinness and mustard

Ingredients

1 French trimmed rack of lamb
Herb breadcrumbs
½ can of Guinness draught
Dijon mustard

Method

This is something special. It looks stunning when finished and it’s really easy to make. Have it on a quiet night in with someone special and you’re sure to impress or even better, persuade someone special to cook it for you.


Put the lamb and the GUINNESS into a bowl, cover and allow to marinate in the fridge for 6 – 8 hours. Take the lamb out and coat it with the mustard. Then press the lamb into the herb breadcrumbs. The crumbs will stick to the mustard and make a nice crust. Then simply roast in the oven at 200° C for 20 – 25 minutes. Serve with roast vegetables and champ potato. Delicious.

TIP - GUINNESS is the only beer that really makes this work. The glaze on the lamb is as rich as you’d expect from red wine.

 

Guinness Chocolate Cake

Ingredients

Size of tine: 2 x 7” sandwich tins
To prepare tins: Grease, dust with flour and shake out surplus
3oz butter
5oz caster sugar
1 large egg
¼ tsp vanilla essence
4oz self raising flour
1oz cocoa powder
1oz drinking chocolate powder
½ tsp baking powder
Pinch salt
3 fluid oz Guinness draught

Method
Cream the butter, add the sugar by degrees and continue beating until mixture is light and fluffy. Beat in the egg yolk and vanilla essence. Sieve all the dry ingredients together thoroughly and stir into the creamed mixture alternately with the GUINNESS. Lastly, fold in the stiffly beaten egg white and divide equally into the prepared tins. Smooth the tops and bake at 375F or gas mark 5 for 25 minutes. Run around the sides with a knife, but leave in the tins for about ½ hour before turning out.
Sandwich together with 1) Coconut icing and cover all over with the rest, 2 ) sandwich with orange butter icing and cover all over with orange frosting
