I hired Zeera caterers last year for an Indian wedding reception and while the cuisine looks very Rajastani I went to the food tasting with them and they assured me the dishes could be changed for a Northern "feel". After two tasting sessions we settled on them and while pricey I thought they could deliver.
On my wedding day, being the bride I didn't eat much but I did know that it wasn't what we agreed on. After I got back from my honeymoon people within my family came to me and stated that the food was very Bengali in taste and had I gone for that option on purpose? Well, I hadn't and I was very dissappointed to learn that most of the guest were not happy with the food - not because it wasn't nice but because the spices used were very Madras and not at all like the food that we are used to. In particular the high amounts of oil and food dyes used which is reminiscent of Bengali cooking.
Needless to say my wedding food wasn't the way it was pitched to me and I blame myself alone for not going with a pure punjabi caterer. My advice to brides, don't believe that a caterer who asvertise their food a certain way can accomodate on the big day, when mass producing food, it is all too easy to be lax about the standards and changes you have promised.
